loofaLots of people think that loofas grow in the ocean like a sponge but these loofas that are still in their husks grew in our garden and will soon be embedded in goat milk soap!

Who would believe that six seeds would take over an entire 1/4 acre garden?  We believe now!  We started with one small row and in 2 months vines had grown into the horse corrals, dog yard and were draping fences.

We also planted loofas as an experiment since we use them in the goat milk soap for exfoliating.  They were rather expensive when we purchased them on the internet.  We now have an entire bin full and are becoming experts at processing them.

Now that is warming up and we need to begin planting our summer garden and chili plants it was time to pick them.  We were told by several gourd experts to put them on pallets to dry out.  Some had already dried out in the sun so we will take them to the market for crafters to relieve their inner beauty!

Recipe of the Week

Spring Fever Salad

We have spring fever here on the farm and all of the animals are feeling their collective oats!  It is that time of renewal and we are all feeling like being outside as much as possible.  Here is a light salad that is delightful for an outside supper or lunch while you are watching your favorite goats cavort…

Ingredients:

Mixed Greens washed and drained (we use Tonopah Rob’s mix)

Barn Goddess Cranberry Pecan Fromage crumbled

1/4 cup good olive oil

1/4 cup basalmic vinegar

1/4 cup fresh or frozen strawberries or raspberries

a pinch (or smidge as Pam would say) sea salt to taste

 Procedure:

Arrange greens in a pretty bowl and sprinkle the fromage liberally on the greens.

Put the remaining ingredients in a food processor or blendor and blend into a lovely salad dressing. Chill until ready to serve.

At the farm we like to have a nice baggette with our salad and of course a light wine has been known to show up on our table!

Pygmy Goats are Perfect Pets…

Barn Goddess Pam has Pygmy goats at her ranch, Rising Sun Ranch.  In addition to being the “compact” version of a goat, taking up less space and eating less, they are highly intelligent and very loving.  Pam plays with her goats each day and they have a playground that her grandson, Justin, built for them.

 Pygmy goats are kept for milk in some parts of the world and are reported to produce a quart or more a day making them valuable to families as a source of food.  They are easy keepers and can be trained to pull carts or wagons as well.

Recipe of the Week

Barn Goddess Goat Cheese Stuffed Wonton Wonders

Ingredients:

  •  1 Package Wontons
  • 1 Package Barn Goddess Goat Cheese (any flavor)
  • Canola or Peanut oil for deep frying
  • 1 cup of water for brushing wontons

Procedure:

  • Put one teaspoon of Barn Goddess Goat Cheese in the middle of a wonton
  • Brush the wonton edges with water
  • Fold the wonton on the diagonal (making little triangles)
  • Press the wet edges together firmly all around the wonton
  • Drop in hot oil and fry on both sides until golden brown(takes only a few seconds– so keep a close watch)
  • Remove from oil and drain on papertowels
  • Repeat until you have the desired amount of cheesy wonton goodness!

Serving suggestions:

Make your favorite dipping sauces like sweet and sour, thai style peanut, wasabi mustard, or Bubbles suggests sourcream with a hint of mustard and fresh dill or cilantro.

Chile Acres Eggs Gain Recognition

Bodacious Brown EggsJimmie’s hens have become famous in the Jewish News Magazine and are being sought out at the Farmer’s Market in Downtown Phoenix.  They sell out within a couple of hours of the morning market bell!  Customers are remarking about the dark golden yolks and the flavor.

Jimmie has done his homework and the girls all eat well!

Recipe for the week of Feb. 9th Goat-a-dillas

Bubbles Dining OutA Twist on Quesadillas

Ingredients:

  •  1/4 Chopped Ortega Chilies
  •  4 oz Cajun Style Fromage Blanc from Barn Goddess Goat Cheese
  •  1 Onion finely chopped and caramelized in olive oil (we suggest Tonopah Rob’s all natural onions)
  • 4 Whole wheat tortilla

 (yields 4)

Procedure:

  • Spread cheese on 1/2 of the tortilla
  • Top with onions and ortegas
  • Fold over like a taco
  • Warm in the skillet until the cheese starts to bubble and the tortilla is golden brown (turn once)
